Sweet and Savory Kale Salad
This is my very favorite salad. There are a lot of great kale salads out there, but the combination of sweetness from the dried fruit paired with the bite of the onion and topped with the creamy mayo dressing and crunch of pine nuts makes for a delightful party in your mouth. If you don’t believe me, watch my 5 year old shovel down her third helping and my three year old yell for “mo dates!!”
Important tip about the prep: The dried fruit and onion need to be chopped very very finely so their flavor spreads evenly throughout the salad.
Wash kale thoroughly.
Remove thick stems from the center of the kale leaves and discard.
Roughly chop kale leaves and pat dry.
Massage kale (about 3-4 minutes) if you plan on eating it right away (OR make a day ahead, massage kale less 1-2 mins, mix with dressing and chill.)
5. Next finely chop the dates and onion and add to the kale. Add pine nuts.
Prepare the dressing (dressing recipe below)
Toss salad ingredients thoroughly with dressing and serve.

Ingredients:
- 1 large bunch kale
- 3 Tablespoons finely chopped dates (can substitute raisins or dried cranberries)
- 2 Tablespoons finely chopped red onion (can substitute shallot)
- 1/4 cup pine nuts (can sub chopped pecans or other nut of choice)
Instructions:
- Wash kale thoroughly
- Remove ribs from kale leaves and roughly chop
- Massage kale for 2-3 minutes
- Add onion, dates and pine nuts and dressing to the bowl
- Toss

Whisk the following ingredients together until well blended:
- 3 Tablespoons mayonnaise
- 3 Tablespoons red wine vinegar
- 3 Tablespoons olive oil
- 1/2 Tsp garlic powder
- Salt and pepper to taste
